Raspberry Avocado Mousse

Anyone who is still sceptical about healthy food needs to try this addictive dessert before they decide that eating healthily is boring or will leave them feeling deprived.

This recipe only takes a few minutes to make and contains fruit and vegetables so it can be enjoyed pretty much any time of the day!

Serves 1

  • ½ frozen ripe banana, peeled and chopped into rough chunks
  • ½ ripe avocado, chilled
  • A pinch of sea salt
  • 3 Tbsp milk (I used almond milk)
  • ½ cup frozen raspberries (or any other berries of your choice)
  • Optional: 1 tsp cinnamon, 2 tsp cacao/ good quality cocoa powder, 1 tsp sweetener such as maple syrup/ honey

Simply place everything into a food processor (a mini one is perfect) and blend until smooth, scraping down the sides if necessary.

You may have to eat it quickly before it melts!

Note: Avocado is only low FODMAP in 1/8 servings so reduce the avocado quantity in the recipe if you are especially sensitive to polyols.
